Cinnamon sticks are great to have around for a few reasons. First they don’t lose their pungency quite as quick as the ground version and they are a really awesome way to infuse awesome cinnamon flavor without actually adding a boat load of cinnamon! I also reuse my cinnamon sticks! When I am making chai tea concentrate I will keep using the same cinnamon sticks or will dry them in between and use them again. When they start to crumble I toss them. They are the parchment paper of the spice world! As long as they are not messy from the use or falling apart they definitely still have some life in them.
Cinnamon sticks are 4 or 5 to the oz depending on the size of the stick.
