Mediterranean Oregano

Oregano is a robust herb that is both complex and strongly aromatic. Oregano is an important culinary herb and its leaves provide its signature flavor. Unlike many herbs, the dried version of oregano tends to be more flavorful than fresh oregano. It is one of the signature Italian herbs. The aroma may remind you of your favorite pizza shop!
Instead of losing their flavor when dried, some herbs intensify. The spiciness of these herbs actually increases when dried. For these herbs during the drying process the structures in the plant tissue collapse which increases the availability and mobility of the herb’s essential oil which allows it to be more readily absorbed in foods. Herbs that are better dried than fresh include marjoram, oregano, rosemary and thyme.
