Secret Agent Burger Seasoning

Whenever I use this, I instantly start singing that 60’s song “secret agent man”. Mix it right into the meat before cooking for mysteriously amazing burgers!
Secret Agent Burger Seasoning is peppery with a touch of sweet and herb. The “secret agent” is Grains of Paradise. They are the seeds of a perennial reed like plant that was originally brought to Europe in the 13th century from the tropical coast of West Africa. When pepper prices would spike it was appreciated as an excellent substitute, hence the nicknames Guinea Pepper, Melegueta Pepper, and Alligator Pepper. Grains of Paradise has gone from the cheap substitute to the expensive stand in, but I appreciate the unique flavor. I often describe the flavor as if pepper and allspice had a baby. Classified use is 2 TBSP per pound!
