Meet our company mascot, Clucky! This is also Dave’s favorite! Like many good chicken rubs Clucky Number 18 Chicken Rub has a bit of sweetness to it from the demerara sugar. When grilling chicken the demerara sugar helps form a nice crust to keep the juices in. Many chiles are used in this blend but only for warmth, not hot spice. You’ll also note some very gentle hints of licorice from the fennel with some subtle fruitiness from the ancho and cloves. My favorite ingredient in this blend is the cinnamon. The cinnamon really gives this rub a flavor to remember. We recently had a customer tell us that Clucky Number 18 Chicken Rub reminded her of Persian cuisine, she really hit the nail on the head!
The number 18 in Hebrew is “chai” which means life. So give your chicken new life with this amazing blend of 18 spices! It is a complex blend of flavors that magically compliment each other! At our cafe we use Clucky Number 18 Chicken Rub on our sweet potato home fries, this blend is not just for poultry!
For best results season chicken for at least 2-4 hours prior to cooking to allow the seasoning to work its magic (place in the refrigerator and remove 30 minutes prior to cooking). If you have the time, you can also let it season for 5-10 hours for optimum flavor (perfect when cooking on the weekend). Use 1 tablespoon of seasoning per pound of chicken. You can always add more if you like, that’s the beauty of seasoning your own food! You’ll find this seasoning to be very light on the salt, so if you live a salt life, you’ll likely want to add a touch more.
