Sometimes more is more! In this case 18 spices that come together as one. A bit of sweet, a bit of warmth, with subtle notes of fruit and licorice. This blend may have an intense ingredient list, but the flavor is surprisingly gentle on the palate.

Meet our company mascot, Clucky! This is also Dave’s favorite! Like many good chicken rubs Clucky Number 18 Chicken Rub has a bit of sweetness to it.  When grilling chicken, the demerara sugar caramelizes to keep the juices in. Many chiles are used in this blend but only for warmth, not hot flavor. You’ll also note some very gentle hints of licorice from the fennel with some subtle fruitiness and smoke from the ancho and cloves. My favorite ingredient in this blend is cinnamon. The cinnamon gives this rub a flavor to remember.  We once had a customer tell us that Clucky Number 18 Chicken Rub reminded her of Persian cuisine, she really hit the nail on the head! It is a complex blend of flavors that magically complement each other. At our cafe we used Clucky Number 18 Chicken Rub on our sweet potato home fries, this blend is not just for poultry!

For best results season chicken for at least 2-4 hours prior to cooking to allow the seasoning to work its magic (place in the refrigerator and remove 30 minutes prior to cooking). If you have the time, you can also let it season for 5-10 hours for optimum flavor (perfect when cooking on the weekend). Use 1 tablespoon of seasoning per pound of chicken. You can always add more if you like, that’s the beauty of seasoning your own food! You’ll find this seasoning to be very light on the salt, so if you live a salt life, you’ll likely want to add a touch more. Creamy, rice sauces pair beautifully with Clucky, so once you’ve cooked your chicken feel free to use it as the shining star in Chicken Alfredo.
