This is Dave’s favorite! Like many good chicken rubs Clucky Number 18 Chicken Rub has a bit of sweetness to it from the demerara sugar and cinnamon. When grilling chicken the demerara sugar helps form a nice crust to keep the juices in. For chiles, ancho, pasilla, de arbol and cayenne are used in this blend but it only has a very, very mild kick. Finally you’ll note some very gentle hints of licorice from the fennel with some subtle fruitiness from the ancho and cloves. The number 18 in Hebrew is “chai” which means life. So give your chicken new life with this amazing blend of 18 spices! It is a complex blend of flavors that magically compliment each other! Find out what the cluck it’s all about!
For best results season chicken for at least 2-4 hours prior to cooking to allow the seasoning to work its magic (place in the refrigerator and remove 30 minutes prior to cooking). If you have the time, you can also let it season for 5-10 hours for optimum flavor (perfect when cooking on the weekend). Use 1 tablespoon of seasoning per pound of chicken. You can always add more if you like, that’s the beauty of seasoning your own food! You’ll find this seasoning to be very light on the salt, so if you live a salt life, you’ll likely want to add a touch more.
