Hot Italian Sausage Seasoning


Kick your homemade sausage up a notch!

Make your own spicy sausage with this traditional blend. Add 1-2 tablespoons of seasoning to 1 Pound of ground meat. Use it to make meatless sausage too, just add to your favorite meatless crumbles!

I started making sausage seasonings because I needed to make large amounts of turkey sausage for my ever-popular Turkey Toscana soup. This is a Rachel-fied version of Zuppa Toscana that incorporates many better choices like coconut milk instead of cream and turkey sausage instead of pork.  I attempted to source some, but the foodservice industry came up empty handed. But I could find bulk ground turkey and thus my sausage journey began.

Even for a professional foodie when I first thought about making my own sausage, I had this vision of an uber complicated procedure in mind. I don’t know why, it’s quite basic. Meat, seasoning, cook. Boom. Now when you get into stuffing casings to make links and preserving it there is more technique involved but that’s not how I need to use it. Sausage is simply an invention of efficient butchering that dates back thousands of years and was a food preservation method to reduce waste. These days I am leery of the shady ingredients of commercially made sausage, so this has been a real game changer for us! I simply make patties instead of links if I want a good ole fashioned sausage, peppers, and onions meal.

If you can make taco meat you can make sausage! I enjoy using this half and half with my regular Italian Sausage Seasoning. It has just a bit more kick.

Hand blended from granulated garlic, granulated onion, fine sea salt, fennel, red pepper flakes, parsley, smoked hot paprika, sage, ground black pepper, ground white pepper, and cayenne.
